I've been noticing that parented nodes aren't resetting correctly when you Stop a snapshot. In particular the wrist nodes parented to hips and shoulders like to mess up, forcing readjustments every scene restart. Is this by design or a sort of bug?
I think I see what's going on. There's a circular dependency in the IK chain. You could try to parent Charlotte's hands to horse's pelvis to stabilize it.
This is unfortunately a limitation of the current implementation. This is one of many things we want to improve and make less of a hassle in YL2.
Oh, having control other than 1 and using humping definitely plays into this as well. When not using those, the IK chain is way more stable.
What you could do is add a snapshot at the top that doesn't use humping. When you want to go back and edit the pose, click this snapshot and let it fully blend into its state. Only after it has been completely blended, go back to edit mode.

Parenting to the pelvis is usually the most stable way to parent things.
Hard to tell but the right hand is supposed to be smack on the elbow joint in the screenshot of Standing - Bob's Gym 2. Worked out pretty nicely
